Miami Beach Birthday Cake

Luckily I made this last night before I totally hit the cold/flu bug wall and here, my friends, is the recipe for you to enjoy this delicious family favorite also! This cake is so yummy and can be decorated in whatever way you choose. It's moist (yes, I said moist) and has a lightness to it that won't totally destroy your guts after the third piece. What? You don't think you'll eat three pieces? You're SO much better than me, huh? Whatever. This cake was for Marvin, Happy Birthday Marvin!

What you'll need:

1 pkg chocolate chips
1 cup graham cracker crumbs
1/3 cup melted butter
1/2 cup chopped walnuts
2 cups flour
1 tsp baking soda
1 tsp salt
1 cube butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla
1 1/4 cups buttermilk (low fat buttermilk works just fine too!)
1 cup (I use more!) whipping cream

Melt 1/3 cup chocolate chips and set aside. Grease 2 9'' cake pans.
Combine graham cracker crumbs and 1/3 cup melted butter, stir in nuts and 2/3 cup (OR MORE!) chocolate chips then set aside.
Cream cube of butter and gradually add sugar, cream well. Add eggs one at a time, blend in melted chocolate chips and vanilla. On low speed, add dry ingredients alternating with buttermilk, beginning and ending with dry.
Divide into the two cake pans and spread crumb mixture on top.
Bake at 375 for 35-40 minutes then cool.
Beat cream with 2Tbls. powdered sugar until stiff, fill and frost sides after stacking layers crumb sides up.
For this cake I dusted with cocoa powder after frosting, you could also use cinnamon or tiny chocolate chips etc.
